Clover Sprout, Pecan, and Apple Salad

This delicious side salad brings fall flavors to the table at any time of year. Add roasted chicken or chickpeas for a heartier salad.

Serves 4 (serving size: about 1 ½ cups)

Ingredients

For the Chicken:

  • 4 cups organic clover sprouts
  • 2 cups mixed greens 
  • 1 cup toasted pecan halves
  • 2 small apples, thinly sliced (preferably a sweet-tart variety like Honeycrisp or Gala)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • ½ tsp salt
  • ½ tsp freshly ground black pepper

Directions

  1. In a large bowl, combine sprouts, mixed greens, apples, and pecans.
  2. In a small bowl, add oil, vinegar, maple syrup, salt, and pepper; stir with a whisk.
  3. Drizzle the dressing over the salad; toss to combine. Serve immediately.
