
Clover Sprout, Pecan, and Apple Salad

This delicious side salad brings fall flavors to the table at any time of year. Add roasted chicken or chickpeas for a heartier salad.
Serves 4 (serving size: about 1 ½ cups)
Ingredients
For the Chicken:
- 4 cups organic clover sprouts
- 2 cups mixed greens
- 1 cup toasted pecan halves
- 2 small apples, thinly sliced (preferably a sweet-tart variety like Honeycrisp or Gala)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup
- ½ tsp salt
- ½ tsp freshly ground black pepper
Directions
- In a large bowl, combine sprouts, mixed greens, apples, and pecans.
- In a small bowl, add oil, vinegar, maple syrup, salt, and pepper; stir with a whisk.
- Drizzle the dressing over the salad; toss to combine. Serve immediately.
