Blueberry-Mint Smoothie with Chickpea Sprouts

You can easily swap almond milk for any mild, plant-based milk (such as oat or coconut), depending on your preferences.

Serves 2 (serving size: 1 cup)

Ingredients

  • 1 ½ cups frozen blueberries
  • 1 cup organic chickpea sprouts, loosely packed
  • ½ cup fresh mint leaves
  • 1 tbsp agave syrup
  • 1 cup unsweetened almond milk
  • ½ cup water

Directions

  1. Combine ingredients in a blender; blend on high until smooth. If mixture is too thick, slowly add water and blend until desired consistency.
  2. Divide blueberry mixture into two glasses; serve immediately.
