
Alfalfa Sprout “Pâté”

Serve this plant-based spread with whole grain crackers, pita triangles, or crudités for an easy appetizer or snack. No walnuts? Swap in toasted hazelnuts instead.
Serves 6 (serving size: about 2 tablespoons)
Ingredients
- 2 cups organic alfalfa sprouts, loosely packed
- 1 cup toasted walnuts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- 1 garlic clove, minced
Directions
- Combine all ingredients in a food processor; pulse until smooth.
- Transfer sprout mixture into a small bowl; garnish with a few whole alfalfa sprouts, if desired.
