Alfalfa Sprout “Pâté”

Serve this plant-based spread with whole grain crackers, pita triangles, or crudités for an easy appetizer or snack. No walnuts? Swap in toasted hazelnuts instead.

Serves 6 (serving size: about 2 tablespoons)

Ingredients

  • 2 cups organic alfalfa sprouts, loosely packed
  • 1 cup toasted walnuts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 garlic clove, minced

Directions

  1. Combine all ingredients in a food processor; pulse until smooth.
  2. Transfer sprout mixture into a small bowl; garnish with a few whole alfalfa sprouts, if desired.
